Pasta
The KitchenAid mixer has outstanding pasta roller and cutter attachments. These are manufactured in
Italy and very well made. Since the mixer provides power to the rollers and cutters, I no longer need
another set of hands to crank the pasta machine as I did in the past. One unique feature of the
spaghetti cutter is the rounded edges on the cutters. This produces an almost round spaghetti product,
very similar to what is produced through extrusion. Another labor-saving gadget is a pasta drying rack,
made by the Atlas Marcato company, manufacturer of my classic hand crank machine. (Oh, yes, I do
have a bad case of "G.A.S." – "gadget acquisition syndrome"!)
I have come to prefer a combination of flours for the pasta dough: unbleached all-purpose flour and
semolina flour in a 50-50 ratio. Here are the recipes for the spaghetti, spinach fettuccine, and lasagna
